We source Wagyu beef from Japan and Australia and across the UK, but our main producer is our sister company Highland Wagyu, located a mere five miles down the road in Dunblane.

Highland Wagyu is a pedigree beef company, breeding 100% Fullblood Wagyu, Wagyu crosses, Aberdeen Angus, Beef Shorthorn, Highland and Dexter cattle with a mission to produce the best beef in the world.


The 25,000-acre estate farm is set in Scotland’s majestic highland landscape on rich and fertile grassland where the premium Wagyu cattle are handfed on specially created feed for up to 36 months – more than double the time needed for other breeds.

To create exceptional marbling, which gives the beef its velvety, buttery texture, the cattle are conditioned and handled with care and respect to keep them happy and content.

The care and attention that goes into the welfare and farming of our cattle during their lives gives chefs and private customers the confidence that our gourmet beef is of the highest quality and the finest flavour.
